Mirchi Bajji is essentially a South Indian street food. When I think of Mirchi Bajji it makes my mouth water and brings to mind the flavours of Hyderabad. I used to have it during the tea break in the office canteen, or else I would go to the nearby shops with colleagues. Along with tea, I would enjoy Mirchi Bajji or a simple egg bonda. Almost every evening, I would indulge in one of these snacks during the break.

The vibrant green chillies, coated in a spiced gram flour batter, and deep-fried to perfection, offer a crunchy and flavorful experience. The green chillies are known for their moderate heat, making the snack accessible and tempting.

Originating mainly from Andhra Pradesh, Mirchi Bajji is also famous in Karnataka, where it goes by the name Mirapakaya Bajji. The snack is distinguished by its use of large green chillies filled with spicy masala, encased in a crisp besan (gram flour) coating.

To prepare this taste treat, a specific variety of large green chillies, known for their less intense heat, is preferred. The chillies are slit and deseeded, ensuring a manageable spice level. Before frying, the chillies are further treated to remove any residual heat, making them a perfect accompaniment for tea or coffee.

My recipe

My twist to the recipe is inspired by my mother, who occasionally incorporates Bengali flavours by stuffing the chillies with a mixture of onion & egg. Which is called Lonkar Bora in Bengali. Lonka means chilli and the bora is fritter. This variation adds a unique Bengali touch to the Andhra-style Mirchi Bajji, making it a versatile snack for different occasions.

How to make Mirchi Bajji

  1. Prepare the Green Chillies:

    • Wash the 6-7 green chillies and slit them lengthwise, remove the seeds if you want to reduce the spiciness
  2. Prepare the Stuffing:

    • Heat 2 tablespoons of oil in a pan or kadai. sprinkle a pinch of salt, add chopped onions and sauté until golden brown.
    • Add 1 egg, chopped green chillies, 1/4 teaspoon turmeric powder and salt as per taste.
    • Scrumble the egg, and fry until just done. But don’t over-fry the egg. Once done remove the egg bhurji from the heat and keep it aside for cooling
    • After the bhuji cools down, with a small spoon stuff the egg mixture in each green chilli. Keep the stuffed green chillies aside.
  3. Prepare the Mirchi Bajji Batter:

    • In a mixing bowl, combine gram flour, rice flour, baking powder, turmeric powder, 1 teaspoon of hot cooking oil, sugar, and salt.
    • Gradually add water and whisk the ingredients into a smooth, thick batter.
  4. Coat the Stuffed Chillies:

    • Roll each stuffed green chilli in the batter, ensuring they are evenly coated.
  5. Apply the Poppy Seed Coating:

    • Roll the batter-coated chillies in poppy seeds, ensuring a generous coating adheres to the surface.
  6. Deep Fry to Perfection:

    • Heat mustard oil in a deep frying pan.
    • Carefully immerse the coated and stuffed green chillies into the hot oil, frying until they turn golden brown and crispy.
  7. Drain and Serve:

    • Once fried, remove the Mirchi Bajjis from the oil and place them on a paper towel to drain excess oil.

Serving Suggestion: 

In the afternoon, enjoy these mirchi bhajis with tea or coffee with mint or tamarind chutney.  Among Bengalis, these mirchi bhajis are commonly known as “lankar bora” (chilli fritters). Therefore, having them with hot rice and lentils during lunch is very satisfying.

Mirchi bajji, also known as stuffed chilli fritters, is a popular South Indian snack that features spicy green chillies stuffed with a flavourful filling, coated in a gram flour (besan) batter, and deep-fried until crispy.

Ingredients

  • 150 grams green chillies, 6-7 large green chilli, slit and remove seeds

  • For Stuffing :
  • 1 medium-sized onion (chopped)

  • 2 eggs

  • 1pc green chilli (chopped)

  • 1/4 teaspoon turmeric powder

  • Salt as per taste

  • For Mirchi Bajii Batter :
  • 3 tablespoon gram flour

  • 1 tablespoon rice flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon cooking oil (hot)

  • 1/2 teaspoon sugar

  • salt as per taste

  • For Coating :
  • 4 tablespoon poppy seeds

  • Other Ingredient :
  • Mustard oil as required

Directions

  • Rinse the green chillies and dry them with a paper towel. Slit them lengthwise on one side using a knife.
  • Making Stuffing:
  • Heat oil in a frying pan over medium flame. Add onion and sprinkle a little amount of salt. Fry onion until turns soft.
  • Add eggs, green chillies, 1/4 teaspoon of turmeric powder and salt. Stir them for 5-6 minutes. Prepare the egg bhurji/ mixture and keep them aside for cooling.
  • With a small spoon stuff the egg mixture in each green chilli. Keep the stuffed green chillies aside.
  • Making Batter :
  • Take gram flour and rice flour in a mixing bowl.
  • Add baking powder, turmeric, sugar, and salt to taste and cooking oil.
  • Add water in parts and prepare a thick batter.
  • Spread poppy seeds on a separate plate.
  • Frying Mirchi Bajji
  • Heat oil in a deep frying pan.
  • Place the stuffed chilli into the batter and coat the poppy seeds thoroughly.
  • Deep the coated green chillies in the hot oil. Place 2-3 chillies at a time and fry them over low- medium flame.
  • When the one side turns golden brown, gently turn over the other side. Fry the green chillies until crisp.
  • Remove the crisp chilli from the oven using a slotted spoon.
  • Place fried chilli bajji on kitchen paper towels to remove extra oil. Fry the remaining green chillies in a similar process.

Notes

  • To reduce the spiciness of green chillies, remove the seeds. they can burst in the oil while frying. 
  • If you prefer you can try adding fried mustard and poppy seeds stuffing with a touch of roasted peanut to get a pungent taste.
  • Always use oil while making the batter.
