Moving away from home was the first time I encountered such problems, and I felt quite frustrated with my mother. I even told her that it was her fault for not teaching me everything from childhood. After that, my mom taught me some simple cooking, including this easy chicken curry recipe.

About 20 years ago, there were no phones, and communication was through letters. When my mother heard about the inconvenience I faced with food, she felt sad and worried. So, she wrote me a letter and sent it, which I received after almost 10 days. When I opened the letter, I found that it contained three recipes.

I kept that letter for a long time, but due to frequent relocations for work, I can’t remember when I lost it. However, I still remember the recipes, and I believe they will be very useful for those who are learning to cook or living alone, just like I was. I faced many difficulties in managing my meals.

A Recipe for Success: Easy Chicken Curry

This easy chicken curry is incredibly easy to make, and anyone can cook it effortlessly. The only utensil required is a cooker. You need to add chicken, onions, ginger, garlic, and green chillies to the cooker, and this easy chicken curry will be ready. Now, let’s delve into the original recipe in detail.

Easy Chicken Curry Recipe Ingredients:

  • 500g cleaned, fresh chicken pieces
  • 4 medium-sized onions (finely chopped)
  • 1 tablespoon vinegar
  • 1 inch ginger (grated)
  • 1 medium-sized tomato (paste)
  • 18–20 cloves of garlic
  • 1/2 teaspoon cumin seeds
  • 2 cardamom pods
  • 2 green chillies (sliced)
  • 1 tablespoon Kashmiri red chilli powder
  • 1 tablespoon turmeric powder
  • 2 teaspoons of coriander powder
  • 1 teaspoon chicken masala
  • 1 teaspoon garam masala
  • 2 tablespoons of curd
  • 1/2 teaspoon sugar
  • 1 cup water
  • Mustard oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Easy Chicken Curry Recipe Instructions:

1. In a mixing bowl, mix the chicken with salt and vinegar, and wash the chicken thoroughly with clean water to remove any impurities.

2. Take a cooker and heat the mustard oil to 4 tablespoons. Heat the oil over medium heat.

3. When the oil is hot, turn off the gas and add cumin seeds, cardamom pods, and garlic cloves. Stir for a few seconds. But make sure the gas is turned off.

4. Add the onion, sprinkle with salt, and sauté for 3–4 minutes; the onion will turn slightly soft.

5. Now add the chicken, sprinkling some salt and turmeric powder on it instantly.

6. Spread tomatoes and green chilies.

7. Add Kashmiri red chilli powder, turmeric powder, salt to taste, and grated ginger.

8. Toss in the chicken pieces, and coat them thoroughly with the spice mixture.

9. Add water. Close the lid of the cooker securely, ensuring the steam release valve is in place.

10. Now turn on the gas. Cook the chicken curry on high heat until the cooker releases three whistles.

11. After the cooking process, allow the cooker to cool down and release the pressure naturally.

12. Open the lid. Chicken is almost 90% cooked. But if we need to thicken the gravy, then it is better to crush the tomatoes and mix them with the gravy. And again, turn on the gas over medium heat.

13. To get an extra taste, add coriander powder, chicken masala, garam masala, and curd or cream (optional). And cook for 5–6 minutes.

14. Garnish with fresh coriander leaves to add a burst of flavour and colour.
