She makes an omelette by mixing 2-3 eggs with onions and green chilies, and then prepares the curry with spices. This tasty recipe goes perfectly with hot rice, making it an irresistible meal. I often end up eating a double serving of rice on those days. Though I love eggs in any form, whether it’s egg curry, egg korma, or steamed egg recipes, this omelette curry is particularly special. It’s so easy to make that even those who are new to cooking or bachelors looking to prepare a quick meal can easily whip it up.

Preparing the Omelette

  1. Crack the Eggs: In a bowl, crack the 5 eggs and beat them well.
  2. Add Ingredients: Mix in chopped onions, chopped green chilies, and a pinch of salt.
  3. Cook the Omelette: Heat a pan with mustard oil. Pour 2-3 laddleful of egg batter, swirl till the batter is evenly distributed in the pan, cook until both sides are golden brown . Once cooked, 3 folds the omellete andĀ  set the omelette aside. Divide the omellete into 3 portion. I made 2 omelletes with 5 eggs.

  1. Heat Mustard Oil: In the same pan, add more mustard oil if needed and heat it.
  2. Add Aromatics: Add chopped onions, garlic, ginger, and the slit green chili. SautƩ until the onions turn golden brown.
  3. Spices: Make a slurry with coriander powder, turmeric powder, red chili powder, Kashmiri red chili powder and 1 tbsp of water. Add them and cook for a minute until the spices are well-blended.
  4. Tomatoes: Add the cubed tomatoes and cook until they are soft and the oil separates from the masala.
  5. Water and Sugar: Add water as needed to form a curry base and mix in the sugar. Bring it to a boil for 5-6 minutes.

Combining the Omelette with the Curry

  1. Add Omelette Pieces: Gently add the omelette slicess into the curry.
  2. Simmer: Let it simmer for a few minutes so that the omelette absorbs the flavors of the curry.
  3. Garnish: Sprinkle chopped coriander on top.
