I’m excited to share a favourite recipe of mine from my early years with you today Phulkopir Pishpash. This Anglo-Indian cuisine is unique to me, and it’s a great treat for kids and adults alike because of its ease of preparation and health advantages.
When I was a child, Phulkopir Pishpash was often a mainstay on our dinner table. A tasty and cosy supper would be indicated by the aroma of the dish filling the kitchen. The beauty of this recipe lies in its versatility – whether with chicken or cauliflower, the Pishpash never fails to impress.

- 1 cup basmati rice (washed)
- 1 medium-sized cauliflower florets
- 2 large Potatoes (peeled and diced)
- 1 cup green peas
- 1 large onion (finely chopped)
- 5-6 garlic cloves
- 1 teaspoon whole garam masala
- 1 bay leaf
- 1/2 teaspoon ginger
- 2 green chillies (chopped)
- Salt, to taste
- Ghee
- 2 cups water (as expected)
Phulkopir Pishpash Instructions:
Prepare the Cauliflower:
- Wash and cut the cauliflower into bite-sized florets.
- In a pot of boiling water, add salt and blanch the cauliflower for a couple of minutes.
Prepare the Veggies:
- In a pan, heat ghee over medium heat.
- Sauté potato pieces, cauliflower, salt, and green peas until they become soft. Set aside.
For Barista (Fried Onions):
- In the same pan, add onion and garlic to the remaining ghee.
- Sauté until the onion becomes translucent.
Create the Pishpash Magic:
- Heat ghee in a frying pan.
- Add whole garam masala, bay leaf, and let them splatter.
- Add basmati rice and fry for 2-3 minutes.
- Add water and wait until it starts boiling.
- Add ginger paste and season with salt to taste.
Assemble and Cook:
- When the rice is half-cooked, spread the sautéed vegetables, green chillies, and fried onion over the rice.
- Cover the pan and cook until the rice is fully cooked.

Directions
Wash and cut cauliflower into florets, then blanch in salted boiling water.
In a pan, sauté potato, cauliflower, green peas in ghee until soft; set aside.
In the same pan, sauté onion and garlic in remaining ghee until translucent.
In a separate pan, heat ghee, splatter whole garam masala, bay leaf, add basmati rice, fry for 2-3 mins.
Add water, let it boil; add ginger paste and salt to taste.
When rice is half-cooked, layer sautéed veggies, green chillies, and fried onion on top.
Cover and cook until rice is fully cooked.
